At 150-180 meters above sea level, these vineyards benefit from cooling mistral winds, ensuring a healthy, prolonged ripening for Sangiovese Grosso grapes. The diverse soils and vineyard exposures at Collelceto capture the nuances of each vintage. Elia hand-manages canopy thinning and bunch selection, protecting the grapes from intense sun and sea breezes. Using traditional large barrels and temperature-controlled steel tanks, he ensures a refined aging process, resulting in wines of remarkable depth and character.
